Ingredients:

227gram/2 sticks butter – room temperature
200 gram sugar
270 gram flour
1 tsp baking powder
½ tsp salt
4 large eggs
Zest of an orange
5 tbsp orange juice



1. Grease and line an 8” round baking pan. Preheat oven to 350 degree F. Sieve flour, baking powder and salt and set it aside.
2. Cream butter and sugar until light and creamy. Add eggs one at a time, beating well after each addition until mixture is light and fluffy. Add in the orange zest.
3. Slow down the mixer and slowly add in the flour. Finally stir in orange juice. Mix until well combined.
4. Turn out mixture into prepared tin. Level out mixture at the sides but allow a shallow well in the centre. This is to enable the cake to level up evenly during baking.
5. Bake for 50-55 minutes or until cooked through when tested with a skewer.

Orange Cupcakes 
      Ingredients:
      145g self-raising flour (1 cup)
      60g caster sugar (1/3 cup)
      30ml milk
      65g butter, melted, cooled
      1 egg, 60g - lightly beaten
      1/2 tsp vanilla extract
      50ml fresh orange juice
      zest from one orange

      150ml fresh topping cream
      1tbsp Cointreau or orange juice




      Method:
  • Preheat oven to 200 deg C. Line muffin pan with 7 paper cases. Combine flour and sugar in a bowl. Make a well in the center.
  • Add milk, butter, egg, orange zest, vanilla extract and orange juice to flour mixture. Gently stir to combine.
  • Spoon mixture into prepared muffin pan. Bake for about 13-15 minutes or until skewer inserted into the center comes out clean. Stand in pan for 5 minutes before transferring to a wire rack to cool.
  • Combine topping cream and Cointreau together, stir well and whisk cream to peak form.
  • Fill a piping bag with Wilton nozzle star tip 1M and the whipped cream. Pipe a circular swirl design on the cuppies.

  • 把混合原料倒入纸杯内到3/4满。送进烤箱烤约13-15分钟或竹签扎入蛋糕内部,取出竹签不沾黏,即可出炉。让蛋糕连烤盘待凉致5分钟,即可取出放在凉架上待凉。
  • 将奶油及香橙酒混合均匀打发。
  • 裱花嘴Wilton 1M装入裱花袋里,倒入奶油。 握裱花袋把奶油挤在小蛋糕上装饰就完成了。 
      **橙味很香浓的杯子蛋糕,步骤做法简单,即使不装饰也一样好吃。

  1. In a large mixing bowl, add flour, caster sugar, brown sugar, oatmeal, milk powder, baking powder and salt. Stir all these dry ingredients until well combined. Set aside.
  2. In another bowl, mix together butter, vanilla extract and egg by using a balloon whisk. Don't worry so much about the lumps. Then, add the vegetable oil into this wet mixture and mix well.
  3. Make a well on the dry ingredients mixture then add the wet ingredients into it. Stir well by using a rubber spatula.
  4. When the dough is ready and not sticky to the bowl, add the chopped cooking chocolate. Combine well.
  5. Roll the dough into equal size balls and put them in a tray which is already lined with parchment paper. No need to press the cookie balls as they will melt in the oven's heat.
  6. Bake the cookies in a preheated oven for about 15 minutes. Be careful not to burn the cookies' bottom.
  7. Remove the cookies from the tray and let them cool. The cookies will be a bit hardened when they are cool.
Simple Vanilla Cake

Ingredients:

  • 180gr Sugar
  • 120gr Unsalted butter, at temperature room
  • 2 Eggs
  • 10ml Vanilla extract
  • 170gr Cake flour
  • 120ml Liquid milk

Tutorials:

  1. Preheat the oven and line the cake pan with parchment paper.
  2. Mix the liquid milk with vanilla extract. Set aside.
  3. Cream sugar and butter by using high speed electric mixer.
  4. Beat in eggs, one at a time.
  5. Combine flour to the creamed mixture by using spatula. 
  6. Stir the milk and vanilla extract mixture into the cake batter until it is smooth.
  7. Transfer the cake to the prepared cake pan.
  8. Bake the cake in a preheated oven for about 30-40 minutes or until the cake is golden brown, with small fire.
  9. Release the cake from the cake pan and serve warm.
Beginner bakers or busy mothers should try 
making this vanilla cake for quick delicious butter cake fix.

The process of making the cake batter of this vanilla cake was quite straight to the point. It's really simple and did not take too much time. The final result of this cake tasted nice too, totally not as plain as its looks - the cake was rich in vanilla aroma and very buttery. The cake had moist texture, not dense, that I love!

Citrus Yoghurt Muffins

(A)
200g flour
175g caster sugar (I've reduced this so adjust to your taste)
1 tbsp each grated lemon zest, lime zest and orange zest
1 tbsp baking powder
pinch of salt

(B)
225ml fat-free plain yoghurt
115ml sunflower oil
1 lightly beaten egg

Preheat oven to 200C. Grease a 12-cup muffin tray.

In a bowl combine (A) thoroughly. In another bowl, mix (B) until well blended. Add the flour mixture until well combined, do not overmix.

Spoon batter into prepared pan. Bake for 20 mins. Remove from oven and cool for 5 mins. Then remove muffins from pan and serve warm.

Citrus Yoghurt Muffins

Chocolate & Raisin Oatmeal Cookies

(A)
85g plain flour, sifted
40g self-raising flour, sifted
28g porridge oats
2 tsp baking powder
55g light brown sugar
55g caster sugar

1 egg
1 tsp vanilla extract
3 tbsp sunflower oil
40g raisins
85g plain chocolate chips

Preheat oven to 190C. Line baking sheets with parchment paper.

In a medium bowl, combine ingredients A. In a separate bowl, beat together egg and vanilla. Stir this mixture into the dry ingredients until just combined (I've used a spatula to mix, easy peasy, something I learnt from watching Sugar).

Slowly add in the oil to the mixture, beating well between each addition, until the mixture start to comes away from the sides of the bowl - you may not need to use all the oil (I think I've used 2.5 tbsp of oil only.)

Stir in raisins and chocolate chips (and the nuts if using). Divide cookie dough into 12 - 15 portions and roll into balls. Place balls well spaced apart and flatten the dough slightly with the back of the spoon. (I did this by scooping and dropping the dough with 2 spoons. Worked just as well.)

Bake for 12 - 15 mins until pale golden. Store in air-tight container for up to 3 days or in the freezer for 3 months.
